I love spring and I love Easter egg hunts and family gatherings and birds chirping and all that, but spring doesn’t actually start for me until I make a carrot cake. That sweet carrot flavor playing off the tanginess of the cream cheese frosting and the cinnamon and nutmeg – well, that’s what spring-time is all about for me.
I am so excited to kick off our second year in business with this very special ice cream flavor. We take our sweet cream base, mix in candied carrots, whiskey-soaked currants, spiced walnuts and a ripple of cream cheese frosting and, as if that weren’t heavenly enough, put it all in a spiced graham cracker crust. To quote my 8 year-old niece, Ellyse, “this is like carrot cake, but wayyyyyyy better!
